August has kept us busy with preserving the harvest!
It was a month of transformation. The beginning of August was full of anticipation for the abundance of fruit and veggies that were on the verge of ripening. It didn’t take long before our buckets (and bellies) were overflowing and bursting at the seams.
Harvesting and preserving this abundance of food was made so much easier with everyone working together to get it done. There would be days where someone would be picking, and other days where someone else would be in the kitchen preserving away.
When it came to preserving the corn, it all happened like a well-oiled machine. A group went out to harvest the corn, then headed over to the fence to shuck the ears and throw the husks to the cows. Once a bucket of shucked ears of corn was full, it was brought in to the waiting kitchen crew and hot pot of water for a quick blanching before getting cut from the cob. These heaping bowls of corn kernels were then put into quart baggies and sent to the freezer. After only a couple hours and almost 200 ears of corn later, we were finished.
