Quick and Easy Sausage Rice Skillet

A quick and easy dinner that my family loves and your family will too! It's easily adjustable whether you're feeding just a few or a crowd!

Ingredients

  • 1 lb Mild Italian Sausage You can use Hot Italian Sausage for more flavor
  • 1 Green Bell Pepper Diced
  • 1 Stalk Celery Diced
  • 1/2 Large White Onion Diced
  • 1 Cup Rice I prefer Jasmine
  • 2 - 2 1/2 Cups Chicken Broth
  • 1 tsp Salt Or to taste
  • 1/4 tsp Black Pepper Or to taste
  • 1 tsp Italian Seasoning

Instructions

  • 1. In large skillet, Brown Sausage over Med/High Heat
    2. Once Sausage has started to brown add in your Vegetables and saute them in the fat as the sausage continues to brown.
    3. Once the veggies are tender and the sausage is fully cooked, stir in your Rice. 
    4. Continue stirring and allow to cook with the meat and veggies for about a minute.
    5. Stir in your Chicken Broth, Italian Seasoning, Salt, and Pepper and allow to come to a Boil.
    6. Turn your burner down to low, give a final stir, and cover with a lid. 
    7. Allow to simmer for about 15 minutes.
    8. Remove lid and stir, then replace the lid and simmer for 5 more minutes or until the liquid has evaporated. 

Notes

Need to feed more people?
This recipe is extremely easy to multiply, just increase most of your ingredients by 1 for each cup of rice you use.
Example
2 cups rice = 4-8 servings: You'll need to use 2 Bell Peppers, 1 Onion, 2 Stalks Celery, 2 tsp salt, and 1/2 tsp pepper.
The amount of chicken broth you'll want to multiply by 2 (It's about 2 -2.5 cups of broth for each cup of rice you use, depending on the type of rice you use).
You can use the same amount of sausage for up to 3 cups of rice.
If you use more than 3 cups of rice, I suggest using an extra pound of sausage.
1-3 cups rice = 1lb sausage
4-6 cups rice = 2lb sausage
7-9 cups rice = 3lb sausage, etc.
